It may seem counterintuitive, but water companies work to remove the increasing levels of phosphates present in their water sources – much human-induced – and then add it back in.
Indeed, 95% of UK drinking water has phosphates added in the form of phosphate-based corrosion inhibitors and hardness stabilisers in order to reduce corrosion levels in the water networks’ distribution pipes, as well as the amount of lead and copper that can dissolve into our water, before it reaches our taps.
This means there are phosphate concentrations of about 1 mg/l in UK drinking water.
This is not to say that phosphate is not a vital mineral, with many metabolic processes depending on its compounds, nor that our drinking water falls outside accepted government and industry guidelines, yet that’s not the end of where added phosphates are to be found: they’re also present in our food in the form of preservatives, acidifiers, regulators and emulsifiers.
So, whilst phosphates may indeed be simply absorbed in our gastrointestinal tract, there is a degree of concern in some quarters that elevated phosphate intake could damage blood vessels, increase the risk of cardiovascular diseases, and lead to a higher mortality rate in those with renal disease. The most recent research is also pointing to the fact that phosphate can play a key part in the virulence of Candida albicans by helping this fungus resist the body’s immune cells.
